Yogurt Marinated Stuffed Pork Chops w/ Indian Spices

Ingredients

  • 4 Niman Ranch bone-in pork chops

  • 1 tablespoon ground cardamom

  • 1 tablespoon ground coriander

  • 1 tablespoon ground cumin

  • 1 tablespoon ground turmeric

  • 1/2 teaspoon cracked black pepper

  • 2 teaspoons dry mustard

  • 1/4 teaspoon ground cloves

  • 1/2 teaspoon ground ginger

  • 1/4 teaspoon cayenne pepper

  • 2 tart apples, Granny Smith or other, peeled and cubed

  • 1 onion, diced

  • 2 cups plain Greek yogurt

Directions

  1. Preheat the oven to 375 degrees F.

  2. Mix together the cardamom, coriander, cumin, turmeric, black pepper, dry mustard, cloves, ginger and cayenne. Divide evenly into 2 medium-size bowls. Set aside.

  3. In one of the bowls of spices, mix the yogurt until well combined. Rub the mixture on the pork chops and let them marinate for 30 minutes.

  4. To the other bowl of spice blend add the apples and onion. Toss thoroughly to coat. Set aside.

  5. Once the pork is fully marinated, make a slit in the side opposite the bone to make a pocket, and stuff it with the apple-onion mixture.

  6. Place pork chops on a rimmed baking sheet and bake for 35 minutes.

  7. Serve hot with your favorite side dish. Rice and applesauce are good accompaniments.
